<div>I am not prejudiced against culinary education, I worked as a chef for 9 years , with Johnson and Whales folks, CIA cats, and the occasional real French chef from the Cordan Bleue(sic). <br/> But, there sure are a lot of elitist young cooks who have a major problem with even the most rudimentary skills of managing tickets like say 3 dueces, a 6 top , and like general turning of tables that any short order cook figures out in about a month in many small restraunts, which perhaps are not trying to make a culinary statement, but, trying to make a " profit" <br/> And how about the ACF ( American culinary federation) <br/>as a guy who started as a pearl diver( dishwasher) and was sautee and su chef of prominent locations, I have found them to be as warm as Mr Burn's from the Simpson's to non ACF folks.chefs. <br/> <br/> I have to footnote this whole soap box lecture with the fact that I'm a commercial Painting contractor now. Self employed , making about 30.000$ a year and only working about 28 hours a week.
